Brownies










Skill: Melting

Ingredients
60g plain flour
50g melting chocolate
50g butter
40g sugar
1 egg
½ tsp vanilla essence
25g walnuts
2 tbsp milk

Method
1. Preheat oven at 190°C.
2. Grease a square cake tin.
3. Melt butter, sugar, milk and chocolate over boiling water.
4. Sift plain flour in a large bowl.
5. Make a well in the centre of the flour and pour in the chocolate mixture, egg and vanilla essence.
6. Stir with a wooden spoon, drawing in flour from the sides.
7. Add chopped walnuts and milk.
8. Pour into greased square cake tin.
9. Bake for 35 to 40 minutes.



Gingerbread








Skill: Melting

Ingredients
  • 100g plain flour
  • 1 level tsp bicarbonate soda
  • ½ tsp mixed spice
  • 1 tsp ground ginger
  • Pinch of salt
  • 50g butter
  • 50g dark, soft brown sugar
  • 1 tbsp golden syrup
  • 1tbsp orange marmalade
  • 1 egg
  • 3 tbsp milk
Method
1.     Preheat oven at 170°C.
2.     Line and grease a loaf tin.
3.     Melt fat, sugar, milk and golden syrup in a pan over gentle fire. Allow to cool.
4.     Sift plain flour, bicarbonate of soda, mixed spice ginger and salt in a large bowl.
5.     Add the cool or warm melted mixture to the dry ingredients by making a well in the centre of the dry ingredients and pouring in the wet ingredients.
6.     Stir with a wooden spoon, drawing in flour from the sides.
7.     Lightly beat the egg and add it in as well.
8.     Beat until smooth with no lumps.
9.     The mixture should be soft enough to pour and to find its own level in the prepared loaf tin.
10.  Bake for 30 to 35 minutes.
11.  Cool on a cooling tray.  Slice the cake into 1.5cm pieces and serve on an oval plate.
