Biscuits (Rubbing in)

Almond Biscuit












Method of Cooking: Baking
Method of Preparation: Rubbing-in

Ingredients
75g plain flour
½ tsp baking powder
40g butter
40g castor sugar
½ egg
¼ tsp almond essence
6 almonds – chopped finely
red and green cherries

Method
1. Preheat oven to 180 C.
2. Grease baking tray.
3. Rub the fat with the fingertips into the flour until the mixture resembles breadcrumbs.
4. Add in the sugar, chopped almonds, egg  and almond essence to form a soft dough.
5. Divide mixture into 20 portions.
6. Roll out each piece and flatten with a fork.
7. Glaze with egg.
8. Bake for 20mins.


Cheese Biscuit

Ingredients
50g plain flour
25g butter
½ egg
25g grated cheese
pinch of cayenne pepper

Method
1. Preheat oven to 190 C.
2. Grease baking tray.
3. Rub the fat with the fingertips into the flour until the mixture resembles breadcrumbs.
4. Mix in grated cheese, cayenne pepper and egg.
5. Roll out and cut with cutters.
6. Glaze with egg.
7. Bake for 20mins.
