Cake (Creaming Method)

Madeleines








Method of Cooking: Baking
Method of Preparation: Creaming

Ingredients
100g plain flour
1 tsp baking powder
75g butter
75g sugar
2 eggs
½ tsp vanilla essence
2 tbsp dessicated coconut
3 tbsp strawberry jam

Method
1. Preheat oven to 190 C.
2. Grease 6 darile moulds.
3. Cream butter and sugar until light and creamy.
4. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
5. Fold in the sifted flour and baking powder to make a soft dropping consistency.
6. Fill the dariole moulds ¾ full with the cake mixture.
7. Bake for 20mins until golden brown or cake have shrunk from the side of the tin.
8. Remove from cake moulds.
9. When cakes are cold, brush with jam and roll in dessicated coconut.
10. Place half a cherry on top of each.

Pineapple Upside Down Cake

Method of Cooking: Baking
Method of Preparation: Creaming

Ingredients
Topping
25g melted butter
25g soft brown sugar
3 canned pineapple rings
2 glace cherries - halved
Cake
100g self raising flour
75g butter
75g sugar
2 eggs
2 tbsp milk
½ tsp vanilla essence


Method
1. Preheat oven to 180 C.
2. Melt butter and pour into round cake tin.
3. Arrange the 3 pineapple rings in the tin.  Put half a cherry in the centre hole of each pineapple ring.  The cut side of cherry facing upwards.
4. Sprinkle with brown sugar and leave aside.
5. Cream butter and sugar until light and creamy.
6. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
7. Fold in the sifted flour and baking powder to make a soft dropping consistency.
8. Pour  mixture evenly over the fruit and sugar into cake tin.
9. Bake for 20mins until golden brown or cake have shrunk from the side of the tin.

Banana Orange Cake










Method of Cooking: Baking
Method of Preparation: Creaming

Ingredients
100g plain flour
75g butter
75g sugar
2 eggs
2 pisang emas
2 tsp orange juice
2 tbsp milk (if necessary)


Method
1. Preheat oven to 180 C.
2. Line and grease round cake tin.
3. Cream butter and sugar untill light and creamy.
4. Add in the eggs a little at a time and cream.
5. Mash bananas and add it to orange juice.
6. Add this to creamed mixture.
7. Fold in the sifted flour.
8. Pour into cake tin.
9. Bake for 40mins in middle shelf.
10. Serve with orange slices.


Chocolate Cake

Ingredients
75g plain flour
75g cocoa powder
1 tsp baking powder
75g butter
75g sugar
2 eggs
½ tsp vanilla essence

Method
1. Preheat oven to 190 C.
2. Line and grease round cake tin.
3. Cream butter and sugar until light and creamy.
4. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
5. Fold in the sifted flour, cocoa powder and baking powder to make a soft dropping consistency.
6. Pour into cake tin.
7. Bake for 20mins until golden brown or cake have shrunk from the side of the tin.


Coconut Cake

Ingredients
100g plain flour
1 tsp baking powder
75g butter
75g sugar
2 eggs
½ tsp vanilla essence
50g dessicated coconut

Method
1. Preheat oven to 190 C.
2. Line and grease round cake tin.
3. Cream butter and sugar until light and creamy.
4. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
5. Add in dessicated coconut.
6. Fold in the sifted flour and baking powder to make a soft dropping consistency.
7. Pour into cake tin.
8. Bake for 20mins until golden brown or cake have shrunk from the side of the tin.

Queen Cake

Ingredients
100g plain flour
1 tsp baking powder
75g butter
75g sugar
1 egg
½ tsp vanilla essence
50g raisins


Method
1. Preheat oven to 190 C.
2. Line and grease round cake tin.
3. Cream butter and sugar until light and creamy.
4. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
5. Add in the raisins.
6. Fold in the sifted flour and baking powder to make a soft dropping consistency.
7. Pour into cake tin.
8. Bake for 20mins until golden brown or cake have shrunk from the side of the tin.


Victoria Sandwich Cake












Method of Cooking: Baking
Method of Preparation: Creaming

Ingredients

200g plain flour
2 tsp baking powder
150g butter
150g sugar
3 eggs
1 tsp vanilla essence
6 tbsp milk (if needed)
3 tbsp jam
1 tbsp icing sugar for dredging

Method
1. Preheat oven to 180 C.
2. Line and grease 2 round cake tins.
3. Cream butter and sugar until light and creamy.
4. Gradually add beaten eggs and vanilla essence into creamed mixture, beating after each addition.
5. Fold in the sifted flour, baking powder  and milk  if needed to make a soft dropping consistency.
6. Spread mixture evenly into the 2 cake tins.
7. Bake for 25mins until golden brown or cake have shrunk from the side of the tin.
8. Turn our on to a cake rack.
9. When cool, sandwich with jam and dredge the top with icing sugar.
