Coconut Buns









Method of Cooking: Baking
Method of Preparation: Rubbing-in

Ingredients
100g plain flour
½ tsp baking powder
pinch of salt
50g sugar
50g butter
½ egg
1 ½ tsp milk
¼ tsp vanilla essence
25g dessicated coconut

Method
1. Preheat oven at 190 C
2. Grease patty tin
3. Sift the flour, salt and baking powder into a big bowl.
4. Rub the fat with fingertips into the flour until the mixture resembles breadcrumbs.
5. Add in the dessicated coconut. Stir.
6. Pour in the beaten egg, milk and vanilla essence and stir to a dropping consistency.
7. Fill the mixture into the patty tins ¾ full and bake for 20mins.


Fruit Buns








Method of Cooking: Baking
Method of Preparation: Rubbing-in

Ingredients

50g sugar
½ egg
1 ½ tsp milk
¼ tsp vanilla essence
25g dried mixed fruit
pinch of nutmeg

Method
1. Preheat oven to 190 C.
2. Grease patty tin.
3. Sift the floor, salt and baking powder into a big bowl.
4. Rub the fat with the fingertips into the flour until the mixture resembles breadcrumbs.
5. Add in the sugar, dried fruits and nutmeg. Stir.
6. Pour in the beaten egg, milk and vanilla essence and stir to a dropping consistency.
7. Fill the mixture into the patty tins ¾ full and bake for 20mins.


Raspberry Buns









Method of Cooking: Baking
Method of Preparation: Rubbing-in

Ingredients
100g plain flour
½ tsp baking powder
pinch of salt
50g butter
50g sugar
½ egg
1 ½ tsp milk
¼ tsp vanilla essence
1 tbsp raspberry jam

Method
1. Preheat oven to 190 C.
2. Grease baking tray.
3. Sift the floor, salt and baking powder into a big bowl.
4. Rub the fat with the fingertips into the flour until the mixture resembles breadcrumbs.
5. Pour in the beaten egg, milk and vanilla essence and mix to a soft but firm dough.
6. Divide the mixture into 8 portions.
7. Flour the hands and roll each portion into a ball.
8. Place the balls on a greased baking tray.
9. With a finger make a depression in the centre of each ball.
10. Fill each hole with some raspberry jam with a teaspoon.
11. Bake for 20mins.


Rock Buns

Method
1. Preheat oven to 190 C.

5. Add in the sugar. Stir.
6. Pour in the beaten egg, milk and vanilla essence and stir to a sticky mixture.
7. Use a dessertspoon and put one spoonful of mixture each time on a greased baking tray.
8. Bake for 20mins.
